Lambie, yes I did, it isn't difficult. Make a peanut butter colored roux with butter and flour, then add chopped onions, bell peppers and celery and cook down until tender(along with Tony Chachere's seasoning), stir in crawfish tails (not from China), simmer about 15 minutes, add chopped green onions and parsley and turn off heat leave covered about 5 minutes. Check seasoning and thickness of sauce, which should be a little runny but not thin. Serve over hot, medium-grain rice with a side salad or veggies of your choice and enjoy.
